The effect of the oil uptake reduction of batter that contained various cereal types and forms was studied. The flake and meal forms of corn, Saohai rice, white bean, soybean and Job's tears were evaluated. As control, batter containing modified starch was used. Results demonstrated that both cereal flake and meal reduced oil absorption. When adding soy into flake form, it showed the decrease of oil content while Job's tears in both flake and meal showed no sign of the oil uptake reduction. On the other hand, an addition of corn flake showed the most significant effects. It, therefore, can be recommended to use in batter formulation. The final batter formula consisted of wheat flour, rice flour and corn flake as critical ingredients.
