Two community groups was selected and evaluated of their potential, namely, Lum-Sum and Wang Kra Jae conservative organic farming’s community enterprise (Kanchanaburi) and Rice berry product’s community enterprise (Saraburi). Products that had been promoted and developed were herbal drinks and Crispy rice berry bar. Firstly, workshop program related to food processing, product quality standard, the application for product approval submitted to Thai’s FDA and packaging development was performed. After that, food process technology, brand and packaging design, as well as the advice of process and food production premises for Thai’s FDA approval were delivered to selected community enterprises. The results in the first year showed that Lum-Sum and Wang Kra Jae conservative organic farming’s community enterprise can sell their herbal drinks at Suk-Jai Market, Nakon Pathom province, Also the group produced other agricultural product and earned more income approximately 5,000-10,000 Baht a month. However, this group still cannot submit the Thai’s FDA product approval, since they lack of money to invest for innovation of premise, while Rice berry product’s community enterprise has been approved for food product premise from Thai’s FDA on June, 2, 2020. The Rice berry product’s community enterprise earned more income from selling their product in range of 3,000-5,000 Baht a month. This project totally received budget 800,000 Baht for 2 working years started from year 2561 to year 2562 and spent 740,119 Baht. สาระสังเขป: โครงการวิจัยได้ทำการส่งเสริมศักยภาพการผลิตและเพิ่มมูลค่าผลิตภัณฑ์อาหารและเครื่องดื่ม โดยการพัฒนาผลิตภัณฑ์เพื่อสุขภาพ 2 ผลิตภัณฑ์ ในระยะเวลา 2 ปี (อย่างน้อย 1 ผลิตภัณฑ์ต่อปี) จากผลิตผลทางการเกษตรในพื้นที่ภาคกลางและภาค ซึ่งได้ทำการคัดเลือกและประเมินกลุ่มที่มีศักยภาพจำนวน 2 กลุ่ม ได้แก่ กลุ่มวิสาหกิจชุมชนคนรักษ์เกษตรอินทรีย์ลุ่มสุ่มและวังกระแจะ (จังหวัดกาญจนบุรี) และกลุ่มวิสาหกิจแปรรูปข้าวไรซ์เบอร์รี (จังหวัดสระบุรี) ผลิตภัณฑ์ที่ทำการส่งเสริมและพัฒนาคือ ผลิตภัณฑ์เครื่องดื่มจากสมุนไพร และผลิตภัณฑ์ข้าวอบกรอบไรซ์เบอร์รี โดยทำการจัดอบรมเชิงปฏิบัติการด้านการแปรรูป มาตรฐานผลิตภัณฑ์ การยื่นขออนุญาตตามมาตรฐาน อย. และการพัฒนาบรรจุภัณฑ์ จากนั้น ทำการถ่ายทอดเทคโนโลยีการแปรรูป การออกแบบตรายี่ห้อและบรรจุภัณฑ์ ตลอดจนให้คำปรึกษาแนะนำในกระบวนการผลิตและการปรับปรุงสถานที่ผลิตเพื่อขออนุญาตการรับรองสถานที่ผลิตจากสำนักงานคณะกรรมการอาหารและยา (อย.) ผลการดำเนินงานในปีแรกพบว่ากลุ่มรักษ์เกษตรอินทรีย์ลุ่มสุ่มและวังกระแจะ ได้มีการจัดจำหน่ายผลิตภัณฑ์เครื่องดื่มสมุนไพรที่ตลาดสุข จังหวัดนครปฐม และได้มีการผลิตสินค้าแปรูปอื่นๆ เพิ่มเติม โดยมีรายได้เพิ่มขึ้นจากเดิมเดือนละ 5,000 -10,000 บาท อย่างไรก็ตาม ทางกลุ่มยังไม่สามารถดำเนินการขอมาตรฐาน อย. ได้ เนื่องจากยังติดขัดด้านเงินลงทุนในการปรับปรุงโรงเรือนให้เป็นไปตามเกณฑ์มาตรฐาน ในขณะที่กลุ่มวิสาหกิจแปรรูปข้าวไรซ์เบอร์รี ที่ดำเนินการในปีที่สองมีการยื่นขออนุญาตสถานที่ผลิตอาหารและได้รับอนุญาตเมื่อวันที่ 2 มิถุนายน 2563 มีการผลิตสินค้าและจัดจำหน่ายตามตลาดและงานแสดงสินค้า มีรายได้เพิ่มขึ้นเฉลี่ย 3,000-5,000 ต่อเดือน ทั้งนี้โครงการได้รับงบประมาณรวมทั้งสิ้น 800,000 บาท ระยะเวลาดำเนินงาน 2 ปี เริ่มปีงบประมาณ 2561 และสิ้นสุดปีงบประมาณ 2562 ใช้งบประมาณทั้งสิ้น 740,119 บาท
