In a study of 2023, a prototype of a functional ingredient product with lipid-lowering properties was derived from the bioactive fatty acids from crickets by partly separating saturated fatty acids using enzymatic hydrolysis in combination with a winterization process and centrifugation to separate impurities suspended in the unsaturated fatty acid layer. The study of shelf life at different temperatures of 4, 35 and 55 degrees Celsius for a period of 24 weeks showed that chemical changes such as pH tended to increase as the storage period elapsed longer and under high-temperature storage conditions Similarly, peroxide values were found to increase with longer storage periods. A comparison of peroxide values of cricket oil stored at different temperatures with the same duration found that the peroxide value of cricket oil stored at 4 °C had the least
change, followed by those of storage at 35 and 55 degrees Celsius, respectively. The evaluation of the physical properties of cricket oil by measuring the color value in the CIE L*a*b* system found that low temperatures (4 °C) had little effect on the color change of the oil. In contrast, storage at high temperatures caused a higher change in the color of cricket oil. A high temperature of 55 had an obvious effect on the color change than storage at 35 °C. The color values in the CIE L*a*b* system that were affected by the augmentation of temperature were a* and b*. When stored at 4°C, the a* value was
increased by 19.23% and raised to 39.83% and 277.61 (or 3.8 times) when stored at 35°C and 55°C, respectively, while the b* value decreased by 5.26, 6.04 and 45.85% when stored at 4, 35 and 55 °C, respectively. This was consistent with the observation of the color characteristics of cricket oil with the naked eye that found the hue of cricket oil became darker likely brownish/reddish yellow when the stored period was longer. In addition to chemical and physical properties, temperature also affected the biological properties of cricket oil. Low-temperature storage of cricket oil products helped to sustain bioactivity for longer whereas the bioactivity in inhibiting HMG-CoA reductase activity of cricket oil decreased when stored at elevated temperatures.
