The process can be improved by means of the closed system to produce a completely aseptic condition whereby pasteurized coconut milk of longer shelf life is obtained. Authors.สาระสังเขป: Airtight jar (Ball) is a much better container for holding pasteurized coconut milk than polyethylene, polypropylene, and saran bags, because it can protect the pasteurized coconut milk from deterioration for a long time.สาระสังเขป: Either benzoic acid or sodium benzoate increases the shelf life of pasteurized coconut milk to a considerable extent. Coconut milk of grade A pasteurized at 121 degree celsius for 10 minutes in the presence of 0.05 per cent sodium benzoate can be kept for 10 days without deterioration, whereas that in the presence of sulphanilamide or chlorine as calcium hypochlorite has a shelf life of only 1-2 days.สาระสังเขป: The suitability of various containers such as plastic bags and glass jars (Ball) for holding pasteurized coconut milk has been explored, and modification of the process of preparing stabilized coconut milk using certain chemicals as preservatives has been attempted.
