The commercially available synthetic compounds are indistinguishable by gas chromatography from the natural constitutents. Mixtures of these synthetic compounds are acceptable flavour substitutes for the natural materials, but mixtures of their saturated analogues are not. The proportion used can vary widelt. The 21:1 synthetic mixture was accepted by testers as a substitute for the natural flavour. Preliminary cost estimates indicate that the synthetic flovour will be economical. - S.K.
