The results showed that the suitable temperature was at 120 degrees C. Moreover, the maximum ratio of maltodextrin to replace glucose was studied at 4 percentage levels: 25, 50, 75 and 100 and it was found that, at all 4 percentage levels, the change of moisture and water activity was not significantly different. Then the ratio of 100 percent maltitol sugar was selected for further study in order to find appropriate ratio of menthol and mint flavor. In candy products, the ratio of menthol at three levels: 0.3, 0.5 and 1.0 percent and the ratio of mint flavor on three levels 0.1, 0.3 and 0.5 percent. It was found that the mint flavor and menthol ratio at 0.3 percent received highest scores in the sensory test. Thus it was selected for further study of proper ratio of herbal extracts in three products which were Prongfa, Yeerha, and Kaprao herbal candy. From the study at the ratio of 0.5, 1.0, 1.5 and 2.0 percent, 1.5 percent received highest score in the sensory test which was acceptable to most consumers. The study of the effect of the herbal candy on a reduction in smoking with smoking testers found that smokers likely to smoke less and some could quit smoking. Three products of herbal candy of Prongfa, Yeerha, and Kaprao for smoking reduction were developed of which the shelf life could be extended to three months. In this study, three kinds of herbal film from Prongfa, Yeerha, and Kaprao for smoking reduction were also developed
