The primary data were collected from the surveys of elderly behavior and interviews of nutritionists and officers who took care of the elderly, particularly those having diabetes or taking a risk of diabetes the risk to diabetes group. These data were used as a guideline to develop convenience food products for the diabetic elderly group comprising main course, snacks and beverages with appropriate nutritional value for the specific target groups. Most of raw material selection was based on the biologically active compounds such as reducing blood sugar level, high dietary fiber, good fat, antioxidants, and enzyme inhibition of gastrointestinal tract (alpha-glucosidase, alpha-amylase, sucrose and maltrase) including stimulating substances of insulin hormone activity. Three categories of food products were developed using those chosen raw materials such as bitter gourd, moringa pod, mushroom, salmon, tuna, Thai herbs, cinnamon, germinated brown rice, colored rice, Jerusalem artichoke, Malva nuts, green tea, bael, cereal, beet root, centella asiatica and others. Five types of main courses from the development were salmon baked rice, fired thin noodles with soy sauce, rice with snapper sour soup and mixed vegetables using freezing process at -20°C, baked mackerel with chili paste and pickled bitter gourd. Regarding snack food, three types of products were frozen Thai herbs spring roll (por pier lui suan), Tub Tim Krob and crispy germinated brown rice. Three kinds of developed beverages were instant corn with cereals, pasteurized malva huts plus herbs and fruit and vegetable juice with herbal bead. Developed food and drink products were rated for overall acceptability from the consumers at the level of 'like moderately'. These products are convenient for preparation or consumption while giving high nutritional value and safety. The technical know-how of production can be transferred to industrial food processing manufacturers. Thus, the project could help improve the food market potential of Thailand to become the World Kitchen in the future. In addition, a handbook of consumption guideline for the diabetic elderly group was prepared.สาระสังเขป: โครงการวิจัยและพัฒนาผลิตภัณฑ์อาหารพร้อมบริโภคสำหรับผู้สูงอายุที่มีภาวะโรคเบาหวาน มีขั้นตอนการดำเนินงานวิจัยตั้งแต่การเก็บรวบรวมข้อมูลปฐมภูมิจากการสำรวจพฤติกรรมของผู้สูงอายุ การสัมภาษณ์โภชนากรและเจ้าหน้าที่ที่ดูแลผู้สูงอายุ โดยเฉพาะกลุ่มที่มีภาวะโรคเบาหวานหรือมีภาวะเสี่ยงต่อการเกิดโรคเบาหวาน ซึ่งข้อมูลเหล่านี้จะนำมาใช้กำหนดแนวทางในการพัฒนาผลิตภัณฑ์อาหารพร้อมบริโภค สำหรับผู้สูงอายุที่มีภาวะโรคเบาหวาน ซึ่งประกอบด้วยอาหารมื้อหลัก, อาหารว่าง และเครื่องดื่มที่มีคุณค่าทางโภชนาการเหมาะสมกับกลุ่มเป้าหมายเฉพาะ. คัดเลือกวัตถุดิบส่วนใหญ่ที่มีสารสำคัญ ซึ่งมีฤทธิ์ทางชีวภาพหลายประการ อาทิเช่น มีคุณสมบัติลดระดับน้ำตาลในเลือดได้, มีใยอาหารสูง, มีไขมันชนิดดี, มีฤทธิ์ต้านอนุมูลอิสระ, มีฤทธิ์ยับยั้งการทำงานของเอนไซม์ในระบบทางเดินอาหาร (แอลฟา-กลูโคซิเดส, แอลฟา-อะไมเลส, ซูเครส และมอสเตส) อีกทั้ง ยังมีสารสำคัญที่ช่วยกระตุ้นการทำงานของฮอร์โมนอินซูลิน ซึ่งวัตถุดิบที่เลือกใช้เป็นส่วนผสมในผลิตภัณฑ์ ได้แก่ มะระขี้นก, ฝักมะรุม, เห็ด, ปลาแซลมอน, ปลาทู, สมุนไพรไทย, อบเชย, ข้าวกล้องงอก, ข้าวมีสี, แก่นตะวัน, ลูกสำรอง, ชาเขียว, มะตูม, ธัญพืช, บีทรูต และใบบัวบก ฯลฯ สามารถนำมาใช้ในการพัฒนาผลิตภัณฑ์อาหาร 3 กลุ่ม ดังนี้ อาหารมื้อหลักที่ได้จากการพัฒนา 5 ผลิตภัณฑ์ ได้แก่ ข้าวอบปลาแซลมอน, ก๋วยเตี๋ยวผัดซีอิ๊ว และข้าวกับแกงส้มปลากะพงผักรวม ซึ่งผ่านกระบวนการแปรรูปโดยการแช่แข็งที่ -20 องศา-เซลเซียส น้ำพริกปลาทูอบแห้ง และมะระขี้นกดอง. อาหารว่างที่ได้จากการพัฒนา 3 ผลิตภัณฑ์ ได้แก่ ข้าวตังข้าวกล้องงอก, เปาะเปี๊ยะลุยสวน และทับทิมกรอบแช่แข็ง. เครื่องดื่มที่ได้จากการพัฒนา 3 ผลิตภัณฑ์ ได้แก่ เครื่องดื่มพร้อมชงข้าวโพดผสมธัญญาหาร, น้ำสำรองผสมสมุนไพร และน้ำผักผลไม้ผสมเม็ดบีดสมุนไพร ซึ่งบรรจุในขวดแก้วและผ่านกระบวนการฆ่าเชื้อด้วยความร้อน (พาสเจอไรส์). ทั้งนี้ ผลิตภัณฑ์อาหารและเครื่องดื่มที่ได้จากการพัฒนาได้รับคะแนนการยอมรับของผู้บริโภคอยู่ในระดับความชอบปานกลาง เป็นผลิตภัณฑ์ที่ช่วยให้มีความสะดวกในการเตรียมหรือการบริโภค และมีคุณค่าทางโภชนาการ อีกทั้งยังปลอดภัยต่อการบริโภค ซึ่งสามารถนำองค์ความรู้ที่ได้ไปถ่ายทอดเทคโนโลยีให้กับผู้ประกอบการอุตสาหกรรมแปรรูปอาหารเพื่อจำหน่ายในเชิงพาณิชย์ได้ จึงเป็นแนวทางหนึ่งที่จะช่วยยกระดับศักยภาพของตลาดอาหารไทย สู่การก้าวเป็นครัวของโลกได้ในอนาคต. นอกจากนี้ คณะผู้วิจัยได้จัดทำสรุปแนวทางในการบริโภคอาหาร สำหรับผู้สูงอายุที่มีภาวะโรคเบาหวานเพื่อใช้เป็นคู่มือการบริโภค.
