The product consists of herbal extracts using hot water extraction method and coloring with caramel as main ingredient. An energy drink recipe was formulated and adjusted with sweetener, flavor and food preservative to obtain consumer flavor preference. Soda water was used in recipe in order to control gas amount in the product. Chemical and physical properties of carbonated herbal energy drinks which were a total soluble solid (oBrix), pH, % acidity (citric acid), and color were examined. Sensory evaluation was also investigated, using 7-point hedonic scale, for each attribute i.e. appearance, color, odor, fizz, taste, and over all liking. The results showed that the original flavor accepted of 65% by external panel was the recipe contains 30% herbal extracts and 6% sucrose. For the fruit flavor, grape flavor with 30% herbal extracts was chosen by the customer. From the results of product quality test with 100 consumers, it was found that the product, either original flavor or grape flavor, was accepted with a moderately like score.สาระสังเขป: ฝ่ายเทคโนโลยีอาหาร สถาบันวิจัยวิทยาศาสตร์และเทคโนโลยีแห่งประเทศไทย (วว.) ได้พัฒนาผลิตภัณฑ์เครื่องดื่มน้ำสมุนไพรบำรุงกำลังอัดก๊าซ ซึ่งแบ่งการพัฒนาออกเป็น 2 สูตร ได้แก่ สูตรกลิ่นรสดั้งเดิม และสูตรกลิ่นรสผลไม้ (องุ่นและมิกซ์เบอร์รี) โดยใช้น้ำสมุนไพรหมักด้วยน้ำร้อนแต่งสีด้วยคาราเมลเป็นส่วนผสมหลัก มีการปรุงแต่งกลิ่นรสด้วยสารให้ความหวานชนิดต่างๆ, สารแต่งกลิ่น และวัตถุกันเสีย ซึ่งจะมีการปรับส่วนผสมเพื่อให้ได้รสชาติและกลิ่นรสที่ได้รับการยอมรับ. สำหรับกระบวนการผลิตในเบื้องต้น ใช้น้ำโซดาเป็นส่วนผสมเพื่อควบคุมปริมาณก๊าซ เมื่อได้สูตรที่แน่นอนแล้วจึงทดลองผลิตโดยใช้เครื่องทำเครื่องดื่มอัดก๊าซ. น้ำสมุนไพรบำรุงกำลังอัดก๊าซที่ได้นำไปวิเคราะห์คุณภาพทางเคมีกายภาพ ได้แก่ ค่าปริมาณของแข็งที่ละลายได้ทั้งหมด (องศาบริกซ์), ค่า พีเอช (pH), ค่าร้อยละปริมาณกรดในรูปกรดซิตริก และค่าสี เป็นต้น รวมถึงการประเมินคุณภาพทางประสาทสัมผัสโดยทำการทดสอบกับผู้ทดสอบภายใน วว. และผู้บริโภคภายนอก ซึ่งจะใช้แบบสอบถามคะแนนความชอบในคุณลักษณะด้านลักษณะปรากฏ, สี, กลิ่น, ความซ่า, รสชาติ และความชอบโดยรวม ที่ 7 ระดับคะแนน (7-point hedonic scale). สำหรับสูตรดั้งเดิมที่ได้รับการยอมรับจากผู้ทดสอบร้อยละ 65 คือ สูตรที่ใช้น้ำสมุนไพรร้อยละ 30 และน้ำตาลทรายขาว ร้อยละ 6. สำหรับสูตรกลิ่นรสผลไม้ พบว่า ผู้ประกอบการได้คัดเลือกสูตรกลิ่นองุ่นที่ใช้ปริมาณน้ำสมุนไพรร้อยละ 30, จากนั้น ทำการวิจัยทางการตลาดโดยกลุ่มเป้าหมายจำนวน 100 คน ผลการวิจัยทางการตลาดพบว่า ผู้ทดสอบมีความชอบต่อเครื่องดื่มสมุนไพรบำรุงกำลังอัดก๊าซทั้งกลิ่นรสดั้งเดิมและกลิ่นรสผลไม้อยู่ในระดับชอบปานกลาง.
