The questionnaires sent by TISTR to those factories were responded only 16 per cent and the study team visited 10 factories that produce either glucose, alcohol/alcoholic beverage, vinegar or soysauce. The survey covered details of types of products, factories and production capacities, product prices, market shares, export and import, marketing and internal consumption, as well as production technology such as raw material, production process, investment cos, principle machinery and equipment, labour employment packaging and transportation From the survey of fermentation industry in Thailand there were 180 factories of large, medium and small sizes.
