This process involves a treatment in which the scratched tamarind seeds are parched in an oven at 120 + 5 degree celsius for about five minutes. After soaking the seeds overnight in a dilute acid solution (pH about 3) containing 0.25 percent NaHSO , the testae become soft and can be easily removed by any suitable means. The wet kernels are dried and then ground to a fine tamarind kernel powder of acceptable quality. Authors, modified
