In this method the ripe tamarind fruit pulp was extracted by either water or 65 percent alcohol. The extract was adjusted to the pH (3.6) of potassium bitartrate by the addition of KOH solution to convert tartaric acid in both forms to potassium bitartrate.สาระสังเขป: Although the literature on the isolation of bitartrate from green tamarind fruits was not available for consultation, an attempt was made in October 1966 to extract tartaric acid from them by using water and acidulated water as solvents, because they are in season for a limited period (October - February). The tartaric acid was isolated as potassium bitartrate of 95 percent purity in 2.4-3.8 percent yield after decolorization with charcoal and recrystallization from hot water. Author, modifiedสาระสังเขป: Fairly pure potassium bitartrate (97 percent purity) was obtained in yields ranging from 11 to 12 percent using water as solvent and 7 to 10 percent using alcohol as solvent. The residual extract was used to prepare syrup and jams.สาระสังเขป: The objective of this project is to separate both free and combined tartaric acid from the tamarind fruit pulp. It is difficult to separate tartaric acid from the pulp due mostly to the physical and chemical nature of the raw material. At the same time, since tartaric acid is very soluble in water (139g/100 ml at 20 degree celsius), its solution prepared from the pulp must be rather pure and concentrated to a very small volume before crystallization of the acid will take place. Under such a stringent condition the separation of tartaric acid from the pulp may not be economically sound.
