The tamarind extract on which the soft drink is based was obtained from the ripe fruit by extracting with water several times until virtually no acid remained in the residual pulp. The concentrated tamarind soft drink was first prepared from the extract. Then this was diluted with sterile water, either plain or carbonated. The bottled soft drink could be kept in good condition for more than 3 months at 26-30 C and seemed to have been well acepted by the taste panel. - Authors.
