Different grades (A, B, C, D and E) of coconut milk were obtained according to the amount of water added. Pressing with water extracted more milk from the coconut meat than pressing without. The quantity of water added did not cause any significant change in the amount of coconut milk extracted.สาระสังเขป: In the presence of appropriate types and quantities of emulsifiers and surfactants, pasteurized coconut milk retained most of the desirable appearance of the unpasteurized milk.สาระสังเขป: None of the additives such as antibiotics, antioxidants, and preservatives could not prolong the shelf-life of the milk beyond one day when kept at room temperature (33 degree celsius). The shelf- life of milk can be extended more than 10 days at room temperature (33 degree celsius) when pasterrized above 100 degree celsius for 5 minutes.สาระสังเขป: The objective of this work is to prepare coconut milk that can be stored at room temperature without spoiling for at least a few days. The product must serve as a good substitute for fresh coconut milk. Cost must be more or less the same as that incurred under domestic practice at present.สาระสังเขป: The use of convenient and inexpensive containers i.e., polyethylene bag, paper cartons, etc. for pasteurized milk should be investigated. Although airtight glass jars are rather expensive to serve as coconut milk containers, they are useful for other purposes after consumption of the milk, and deserve careful consideration.สาระสังเขป: This sis an interim report summarizing the results obtained from the inception of the work in October 1966 until the end of March 1967.
